We are a group of students who wish to establish an on-campus student-run eatery that serves local, organic, and sustainably-sourced food under a cooperative model, while creating a locale for community at NYU.
Our establishment, the first of its kind on campus, would be intended to appeal to the needs of NYU students in terms of practicality, availability, cost, nutritional content, and environmental or ethical considerations including animal welfare, associated greenhouse gas "foodprint," labor conditions, farmers' rights, and supporting local communities. We do not intend to uproot the current food services that exist on campus, but will instead seek to provide affordable, alternative options while educating students and staff on the quality, nutrition, and ethics of food.
While our idea was born out of the desperate need for real food options on campus, we recognized simultaneously the lack of gathering space for students--space that doesn’t require a reservation, is inviting to the public, and somehow reflects the character of the NYU community while adhering to or exceeding the university’s standards of sustainability.
An additional, integral objective of our project will be to educate the NYU community on the availability, importance and attractiveness of local, organic, and plant-based diets through written materials, signage, and monthly workshops. This can create a living laboratory in which participation and patronization compel student to student engagement and education.
